Cook With What Is In The Refrigerator

You can almost always find eggs in the refrigerator.


It can be difficult to carve out enough time from your busy schedule to plan an elaborate meal with all of the preparation it entails, including food shopping, researching recipes and cooking several courses. Fortunately, you can cook meals using only what is in your refrigerator at any given time and still have a satisfying dining experience. You might even find that one day's worth of meals, including dessert, prepared with what is in the refrigerator can be healthier and more wholesome than more formal meals.


Instructions


1. Make a frittata for breakfast using eggs, cheese, a little olive oil and a few stray vegetables that you can always find in your refrigerator. Beat six large eggs and add up to a cup of shredded cheese. Slice a potato, a red pepper and an onion and cook them for five minutes in a pan with olive oil. Pour the egg mixture into the pan and cook, covered, for three to four minutes. Flip the frittata and cook it for two more minutes.


2. Make an impromptu lentil soup for lunch. Start with a base of lentils and chicken stock, adding whatever tomatoes, squash, onion, garlic and kale you find in the refrigerator. Season with salt, pepper, curry and cumin.


3. Make pesto for dinner if you find basil in your refrigerator. Put two cups of basil leaves, a garlic clove, salt, pepper and olive oil into a food processor and blend. Serve over pasta or whatever grilled fish or meat you find in the refrigerator.


4. Reconstitute leftover rice, even a nearly forgotten container of white rice from a Chinese take-out restaurant. Add two eggs, a cup of cream and 1/2 cup of sugar to the rice and let it soak overnight. Add vanilla extract and raisins to taste. Cook the mixture for an hour at 350 degrees for a rice custard for dessert.


5. Make some gazpacho for the next day. Place the following items in a food processor: 1 lb. of tomatoes, a cucumber, a few pieces of stale bread, 1/4 cup olive oil, 2 tbsp. sherry vinegar, a clove of garlic and one cup of water. Blend the mixture until it is smooth. Garnish with anchovies. Refrigerate overnight.


Tips Warnings


Do not risk illness by using old meat you find in the refrigerator that might be spoiled. Err on the side of caution and discard it.
