Stirfry Shiitake Mushrooms

Shiitake is delcious when stir fried.


Shiitake mushrooms are a popular ingredient in Asian cuisine. These mushrooms are very flavorful, low in fat and are rich in protein, vitamins and minerals. They are also delicious eaten alone, with rice or other vegetable dishes. You can purchase shiitake mushrooms at any local large chain supermarket or Asian grocery store. Stir frying shiitake mushrooms is one way of cooking them.


Instructions


1. Place 3 oz. shiitake mushrooms in a strainer and rinse under running water to remove any dirt and other small particles.


2. Slice the shiitake mushrooms into thin slices and set aside.


3. Pour 5 to 6 tbsp. of cooking oil in a wok or frying pan and heat on medium heat for a few minutes.


4. Place the shiitake mushrooms in the frying pan and fry until the mushrooms turn dark and rubbery.


5. Add 2 tbsp. of soy sauce, 1 minced garlic clove, 1 tbsp. brown sugar, 1 tbsp. lemon juice and a ½ tbsp. black pepper into the frying pan and stir.


6. Transfer the shiitake mushrooms to a plate and garnish with 1 oz. chopped fresh spring onions or parsley and serve over rice or eat as a side dish.
