Store Potatoes With Lime

Store your potato harvest during the winter with pickling lime.


Storing potatoes without a root cellar is more difficult because they can sprout or shrivel if not properly stored. Ideally, you should store potatoes in a dark and humid location, but not everyone has access to these areas. There are various methods for storing potatoes, including the use of pickling lime. Pickling lime is a form of calcium hydroxide. Due to its edibility, it is safe to store potatoes with pickling lime. The process is relatively simple and preserve your potatoes for longer periods of time without growths.


Instructions


1. Place the wooden crate on a flat surface. Sprinkle enough pickling lime in the crate to cover the bottom of the crate with a thin layer.


2. Add potatoes on top of the pickling lime in the crate. Create a 5-inch layer of potatoes. Sprinkle a second thin layer of pickling lime on the potatoes. Repeat the procedure to fill the crate with potatoes by alternating between potatoes and pickling lime.


3. Cover the top layer of potatoes with a tarp or straw.


4. Check the potatoes weekly and remove potatoes that are growing mold or shriveling.


5. Wash and scrub the potatoes thoroughly before eating to remove any pickling lime on the potatoes.
