Smoked Pork Tenderloin Recipe

Pork tenderloin is a good quality, economical cut of meat with strong natural flavors. Pork tenderloin is a good meat to smoke using the recipe below in either a charcoal or electric smoker.


Ingredients


1 1/2 to 2 lb. pork tenderloin


1 cup apricot nectar


1/2 cup apple cider


1 clove garlic, minced


2 tbsp. soy sauce


2 tsp. vinegar


1 tbsp. brown sugar


1/2 tsp. allspice


1/4 tsp. ground ginger


1 tbsp. whole cloves


Smoking Instructions


It is a good idea to smoke three or four pork tenderloins at once; unused portions can be frozen.


Using a fork, pierce each piece of pork all over. In a saucepan combine the remaining ingredients and heat until the sugar is dissolved. Place the tenderloin in a glass bowl or plastic bag and add the marinade to the meat. For best results refrigerate the tenderloin in the marinade overnight. After the meat has soaked in the marinade, remove the meat and place on the smoker grill. Pour the remaining marinade into the smoker's water pan.


Using a charcoal smoker, 5 lbs. of charcoal, 3 qts. of water and two wood sticks should be used. Smoke the tenderloin for 2 to 3 hours or until the meat is tender.


Using an electric smoker, 3 qts. of hot water and two wood sticks should be used. Pork tenderloin should be smoked for 2 to 3 hours or until the meat is tender.


Charcoal or Electric


The choice of which smoker to use comes down to preference on how much involvement a person wants in the cooking process. The charcoal smoker requires continuous tending to keep the coals at a constant temperature. The electric smoker is best for anybody who wants to prepare the meat, set it in the smoker and return at the end of the cookout to smoked pork tenderloin.
