Serve Poached Salmon

You can grill, bake or broil salmon for a typical recipe. Or you can poach the fish for something elegant and different. High in omega-3 fatty acids, salmon is a great addition to any diet.


Instructions


1. Rinse the salmon filet under cool running water. Press gently over the filet to feel for residual bones. Remove any bones with pliers or pull them out with your fingers.


2. Transfer the salmon filet to a large piece of aluminum foil. Season with a sprinkling of Kosher salt, freshly ground black pepper and a pinch of cayenne pepper.


3. Top the surface of the filet with sliced lemons. Break up a few slices of raw onion and place the pieces on top of the lemons. Spoon store bought salsa over the onions and lemons.


4. Bring the long ends of the foil together and fold it over several times to seal it well. Twist each end of the foil tightly to seal in the steam created by the cooking fish.


5. Bake the foil-wrapped fish in a 350 degree F over for 20 minutes per inch of thickness. Remember that the fish continues to cook after it's removed from the oven so take care not to overcook.


6. Remove the salmon from the oven. Open the foil and drain the excess liquid from the fish. Remove the lemons and onions from the top of the filet.


7. Place the salmon filet on a serving plate. Top with fresh salsa. Garnish with fresh lemon slices and add sprigs of parsley for extra color.
