When you're hungry for a buttermilk pancake, a good flat griddle provides an excellent surface upon which to prepare the breakfast treat. Depending upon your needs, there are many griddles on the market, spanning a wide range of quality and price. 1. Buy a griddle that fits your lifestyle. Before you make your purchase, consider how often you will use your griddle. Due to their bulky size, griddles can be difficult to store out-of-sight. Choose a griddle only as large as you will reasonably use if space is an issue.


2. Decide upon the method of heating your griddle. Many kitchen griddles come with a convenient electrical plug to provide their own heat when turned on. However, electrical cords that run to heated appliances are often short, so make sure a griddle can sit next to an outlet. Alternately, you can buy a griddle that rests upon one or more burners of your stove.


3. Research griddle features, such as a non-stick coating, before you buy. Ribbed griddles, designed to cook meat or vegetables, turn out nicely charred strips, while flat griddles produce pancakes and grilled sandwiches (see Resources below)


4. Compare prices before you decide upon a griddle. A griddle with many features, temperature controls, alternate ribbed and flat surfaces and separate compartments will cost more than a plain griddle, but your taste buds may not know the difference. Resist spending more for features you won't use.
