Make A Rich Lowcarb Waffle With Coconut Flour

Coconut flour can be used to make muffins, pies, cakes, breads and other baked goods.

If you think you can't enjoy waffles as part of a low-carb diet, think again! Waffles made with coconut flour instead of wheat flour are low in carbohydrates, high in fiber and protein, and they are gluten-free. Coconut flour has a slightly nutty and naturally sweet flavor, without adding a strong coconut taste. As a healthier alternative to wheat flour, it contains more protein and 10 times more fiber than grain flour, most of it the healthier soluble type.

Instructions

1. Preheat the waffle iron. Many waffle irons have adjustable temperature settings, allowing you to choose the color and texture of your waffle.

2. Blend all the ingredients. You can use a mixer, blender, food processor or add the ingredients to a bowl and use a whisk.

3. Pour the recommended amount of batter into your waffle iron. Consult your waffle iron's instruction manual to determine the recommended amount of batter. This recipe usually makes four to six waffles, depending on your waffle iron.

4. Close the waffle iron and cook for 3 to 5 minutes, or until the waffles easily separate from the waffle iron. Cooking time will depend on your waffle iron's recommended cooking times and the desired waffle texture and color.

5. Repeat with the remaining batter.
