Gourmet Ham Salad

Leftover ham works just as well as fresh for ham salad.


Ham salad is an Anglo-American dish, closely related to tuna salad, chicken salad and egg salad. Though ham salad is typically prepared to use up leftovers, with the proper recipe the dish can still be gourmet. A gourmet ham salad uses pasta to complement the texture of the ham and absorb some of the dressing in the dish. Preparation time takes no more than 20 minutes, followed by hours of chill time to allow the flavors to combine. The finished dish yields six servings.


Instructions


1. Combine 1 cup cooked pasta, 1 lb. cubed cooked ham, 1 chopped red bell pepper, 1 chopped green bell pepper, 1 chopped red onion, 10 chopped sweet pickles and 1 cup halved baby tomatoes in a salad bowl.


2. Combine 1 cup mayonnaise, 3/4 cup sour cream, 3 tbsp. beef bouillon, 1 tbsp. white vinegar, 1 tsp. salt, 1 tsp. ground black pepper, 2 tbsp. minced garlic and 1/2 cup sweet pickle juice in a small bowl. Whisk the dressing until all ingredients are smooth.


3. Pour the dressing into the ingredients in the salad bowl and stir with a large wooden spoon. Continue stirring until all ingredients are coated evenly in the dressing.


4. Cover with plastic wrap and chill for six hours before serving.
