Thicken Salad Dressing

Creamy salad dressings are commonly made with a mayonnaise base.


With all the sugars, preservatives and dyes found in many commercial salad dressings, it may be time to start making your own. Homemade salad dressing may not last as long as store-bought dressing, but you'll be in control of the ingredients and save money. You can also experiment with flavors and textures until you discover a dressing that is ideal. If you find that your homemade dressing is tasty but a bit too thin, there are a few ways to thicken it up.


Instructions


1. Mix 1 tablespoon cornstarch and 1 tablespoon water in a bowl and stir it into the salad dressing. Cornstarch is a natural thickening agent often used on soups and sauces. It works in the same manner for salad dressing.


2. Add more mayonnaise if your dressing is mayonnaise based, such as thousand island and buttermilk. Add 1 tablespoon of mayonnaise at a time to reach your desired thickness.


3. Mix in pureed silken tofu. It has a custard-like consistency when pureed and can be used to replace eggs in many recipes, including dressing. Using tofu also significantly reduces the extra amount of fat that would otherwise be added from mayonnaise. Stir in 1 tablespoon at a time.


4. Prepare the dressing ahead of time and place it in the refrigerator for several hours or overnight. The dressing will thicken slightly in the refrigerator.
