Make Wild Rice With Broccoli Rabe And Gorgonzola Cheese

Wild rice with broccoli rabe and Gorgonzola cheese is a quick dish that can be served alongside many different main courses, including braised or roasted chicken, grilled swordfish or red snapper or next to spiced carrot or pumpkin soup. Wild rice with broccoli rabe and Gorgonzola cheese can also be served cold, making it ideal for picnics or day trips. Pair this wild rice dish with a full-bodied white wine without too much sugar.


Instructions


1. Heat the extra virgin olive oil in a large saute pan over medium heat. Add the broccoli rabe and bell pepper and saute for 2 to 3 minutes or until the broccoli rabe begins to wilt and the red bell pepper softens.


2. Add the garlic, oregano, crushed red pepper and wild rice and saute over low heat for 6 to 7 minutes. Season with sea salt and coarse ground black pepper to taste.


3. Transfer the wild rice to a large serving platter. Do not plate the vegetables.


4. Top the wild rice with the vegetables from the saute pan. Sprinkle the crumbled Gorgonzola cheese over the top of the vegetables.


5. Garnish the dish with the chopped fresh flat-leaf parsley. Serve immediately.
