Make Soda Pop Cake

Dieting normally means cutting out desserts-or at least cutting out desserts that taste good. Forget the sugar-free gelatin and the fresh fruit. Make soda pop cake that tastes like a decadent treat without all of the fat!


Instructions


1. Purchase one yellow or white cake mix. Any brand will do as long as it will make a 9-by-13 inch cake. Buy a 12 oz. fruit-flavored diet soda, a large tub of fat-free, frozen, nondairy whipped topping such as Cool Whip and 1 lb. of fresh strawberries.


2. Preheat the oven and prepare your baking pan according to the mix directions.


3. Dump the dry cake mix into a medium-sized mixing bowl. Use a fork to remove most of the lumps from the mix.


4. Add the 12 oz. diet soda to the cake mix. Pour it slowly to avoid having the fizz overflow from the bowl. Mix together thoroughly with a whisk or wooden spoon.


5. Add no additional ingredients even though the cake mix directions will call for more. Fold the cake mixture into your baking pan and place the pan in the oven. Bake the cake according to the package directions.


6. Wash and slice the strawberries while the cake is baking and store in the refrigerator for later use.


7. Remove the cake from the oven when ready and allow it to cool completely in the pan. This will take a couple of hours.


8. Ice the cooled cake with the fat-free whipped topping. It's fat-free so use a generous amount!


9. Top with the sliced fresh strawberries. Slice and serve. Leftover cake needs to be covered and stored in the refrigerator.
