Make Coconut Frosting With Food Coloring

Color shredded coconut for a bright cake topping.


When cake calls for a fresh and lightly sweet frosting with a bit of tropical flavor, top it with a light and fluffy coconut frosting. Coconut flavoring and shredded coconut define this frosting's unique flavor, and your choice of food coloring makes this recipe perfect for a bright and pretty dessert.


Instructions


1. Heat water in a double boiler to boiling. Combine two unbeaten eggs whites, sugar, water and marshmallow pieces in the upper portion of the double boiler and beat until the mixture stands in peaks, about 10 minutes with an electric mixer.


2. Remove the mixture from the heat and stir in the coconut flavoring and cream of tartar. Beat for an additional five minutes or until the frosting is thick enough to spread.


3. Color the frosting by stirring in one to two drops of food coloring until color is uniformly distributed throughout the batch of frosting. Set aside.


4. Place coconut in a resealable plastic bag. Add five to ten drops of food coloring and shake until the coconut is evenly tinted.
