Store-bought focaccia serves as a handy base for a variety of savory toppings. When cut into neat, single-serving wedges, focaccia bread can be used as a quick meal on it's own or as an appetizer at your next gathering.
Instructions
1. Preheat oven to 350 degrees. Lay the focaccia bread on a clean work surface. Brush the baking sheet with oil.
2. Brush the surface of each focaccia bread with either extra virgin olive oil or the melted butter. Sprinkle each bread with grated cheese and a good amount of freshly ground black pepper.
3. Divide the scallions and sprinkle some over each crust. Put 2 tablespoons each chopped Cubanelle peppers on each crust. Repeat with the zucchini.
4. Distribute equal amounts of the shredded mozzarella and shredded cheddar over the crusts. Season each with oregano.
5. Place both crusts on the baking sheet. Bake for 15 minutes. Remove from oven to work surface. Cut each focaccia bread into four equal serving wedges and place on a serving platter.
