Make Wine Jelly For Holiday Gifts

Use different wines for different jellies.


Wine jellies are great as unique holiday gifts that everyone will love. They are easy to make and dress up in wine glasses or dessert dishes. Sealed with paraffin, the jellies will last several months. For a deep red jelly, use a port of a dark red. For a soft-colored jelly, choose a light red or rose. Use a berry or fruit wine to give the jelly a fruitier taste.


Instructions


1. Mix the wine and sugar in the top of a double boiler over rapidly boiling water.


2. Cook the wine and sugar mixture, stirring constantly for about three minutes, until the sugar is complete dissolved.


3. Remove the hot double boiler from the stove. With the jelly still over the hot water, stir in the liquid pectin and mix well.


4. Remove the foam on top of the hot jelly with a metal spoon.


5. Quickly ladle the mixture into hot, sterilized wine glasses or dessert dishes. Do not fill completely: Leave a half-inch at the top for a paraffin wax seal.


6. Seal the glasses or dishes with a thin layer of paraffin once the jelly has cooled and set.
