Make Indian Chicken Stuffing

This mix of English technique and Indian ingredients yields a delicious, spiced stuffing for a main lunch or dinner dish. After preparing the stuffing, you can use the mixture to stuff a roast, baked, or grilled chicken in whatever form you choose. The meal may be completed with a few authentic additions such as Indian naan bread or jasmine rice. This recipe serves 4 to 5 people.


Instructions


1. Heat the cooking oil in a deep pan over medium heat.


2. Toss in the cumin seeds and sauté for a minute or so. Add the onions and heat until they begin to brown slightly.


3. Add both the garlic and ginger pastes and let them fry for about a minute.


4. Put in the ground meat plus the cumin powder, coriander powder and garam masala spice.


5. Cook the ground meat for approximately 5 to 7 minutes, stirring frequently.


6. Toss in the potatoes, tomatoes and peas, stirring and cooking through until the potatoes are tender.


7. Remove the pan from heat and add the chopped coriander, lime juice and salt to taste, stirring in well with the other ingredients.
