Age Sardines

Enjoy sardines year round by aging them in cans.


Canning is one of the most common ways to age food --- almost any food can be placed in cans and enjoyed for several months past its normal expiration date. When canning food items, it is important to use sterilized jars and seal your product in air-tight containers to prevent bacteria from contaminating the food. To make canned sardines, choose a recipe that suits your tastes and cook the sardines until they are tender.


Instructions


1. Place all the spices, sardines and other ingredients into a pressure cooker and close and lock the lid.


2. Turn the pressure cooker on high and let the pressure cooker cook until it begins to make a hissing sound. When you hear this noise, turn the heat down to the low setting and set a timer for 20 minutes. Once the 20 minutes has passed, allow the sardine mixture to cool for 15 minutes. This cooking process is crucial to making your sardines soft, and flavorful.


3. Sterilize all your jars, lids and O-rings in boiling water for at least five minutes and set them aside.


4. Fill up the jars with sardines, placing the fish so they are standing up in the jars. Screw on the lids so they are tight.


5. Insert the filled jars upside down inside your pressure cooker along with a few inches of water.


6. Close and seal the lid of the pressure cooker and turn up the heat until the cooker emits a hissing sound. When you hear the sound, cook the jars on high heat for 20 minutes.


7. Remove the jars from the pressure cooker and cool them for one hour, upside down to complete the canning process.
