Make a Simple Edamame Dip
Making your own edamame dip is fast, saves you money and helps you avoid unnecessary ingredients in packaged versions that may contaminate an otherwise healthy snack. Dips made with edamame (young soybeans in the pod) are usually served with pita chips to complement the taste. Serve this dip as an appetizer before a lunch of soup or sandwiches, which often go well with salty dips. This recipe makes four servings.
Instructions
1. Boil 1 1/2 cups of water with 3 tbsp. kosher salt in a saucepan. Pour in a 12 oz. bag of frozen edamame.
2. Cook the edamame for five minutes or until tender.
3. Drain the cooking liquid into the sink by pouring it out of the saucepan. Save about 1/2 cup of the cooking water by leaving it in the saucepan.
4. Pour the edamame and 1/4 of the cooking liquid plus 1/4 cup olive oil into a food processor.
5. Blend the mixture until smooth and add the remaining cooking liquid with 2 tsp. fresh lemon juice. Blend the mixture again.
6. Add 3 tbsp. minced fresh basil to the food processor and pulse just until the basil is well mixed.
7. Transfer the dip into a serving bowl and garnish with a basil sprig and a sprinkle of garlic powder (optional).
8. Grate lemon zest on top and season with salt and pepper to taste. Serve the edamame dip with pita chips.
