Get Sugar Into A Mole

Sugar is one of many ingredients that make up mole.


Mole is a traditional Mexican sauce that originated in the southern province of Oaxaca. It is so famous that it even has its own official holiday, Oct. 23. Thousands of variations of mole exist, including secret recipes that are jealously guarded by families and restaurants. All mole has something in common: the taste, a mixture of spicy and sweet that includes chocolate, chilies and sugar. The cook can get sugar into a mole in several ways.


Instructions


1. Mix the sugar with the other ingredients at the beginning of the process if you are using a dark, moist sugar or sugar in a liquid form.


2. Use a blender if you are mixing the sugar with the wet ingredients. This will ensure a thoroughly blended mixture.


3. When using sugar in its dry, granular form, add it between taking the wet ingredients off the stove top and moving them to the oven. Use a wooden spoon to fold the sugar into the mixture, stirring constantly.


4. Ensure that you have added the sugar by the time the mole has been transferred to the oven.
