Boil Whole Chicken Soup

Whole chicken soup is a comfort food on cold nights and is easy to make.


Making chicken soup using a whole chicken is simple and easy. You only need a few vegetables, some water or broth and a bit of time. Chicken soup is a hearty meal on a cold winters night and can be comforting when you are feeling under the weather. Boiling a whole chicken for soup means there will be plenty for the whole family. Just remember to cut away the excess skin and fat.


Instructions


1. Rinse the chicken under cold water and set aside.


2. Heat the oil in a large pot.Add the onions and cook on medium high until they are golden. Add the garlic and cook for two minutes or until fragrant. Do not burn the onions or the garlic.


3. Add the water or chicken stock to the pot. Place the chicken in the pot carefully. Add the carrots, celery, potatoes and thyme.


4. Bring the water to a boil, reduce the heat and let simmer for approximately 1 1/2 hours. The soup will be done when the chicken falls off the bone and the vegetables are tender. Taste the soup and add salt and pepper as needed.


5. Remove the chicken from the pot. At this point the chicken can be left whole and sliced as desired or pulled from the bone and added to the soup. If pulling the chicken from the bone it is best to wait 15 minutes until the chicken is cool enough to handle.
