Make Nobake Chocolate Peanut Butter Balls

If you love the flavors of chocolate and peanut butter and enjoy a super delicious combination of both, make a batch of no-bake chocolate peanut butter balls. They're even easy enough for kids to make with only a bit of adult assistance.


Instructions


1. Place 1 1/4 cups salted peanuts in a food processor with a metal blade. Process them until they're finely chopped, then remove them from the food processor and put them in a small bowl.


2. Mix 2/3 cup of softened butter and 1 2/3 cups of peanut butter in a large bowl with an electric mixer until smooth and creamy. Add 1 tsp. of vanilla extract and continue to beat the mixture, scraping the sides occasionally.


3. Add 1 lb. of powdered sugar gradually as you continue to blend.


4. Line the jelly roll pan or cookie sheet with waxed paper. Roll the mixture into small balls about the size of a walnut, and place them on the waxed paper.


5. Cover the pan with plastic wrap, and put it in the refrigerator for about an hour, until the peanut butter balls firm up.


6. Heat 2 large packages of chocolate peanut butter chips and 2 tbsp. butter in a microwaveable bowl until they're slightly melted.


7. Poke a toothpick into each peanut butter ball, and roll each one in the melted chocolate mixture, and then in the chopped peanuts. Return them to the refrigerator long enough to set up, and remove the toothpicks.
