Make A Fast And Easy Stuffed Bell Pepper

These stuffed bell peppers are easy but elegant.


Enjoy the delicious taste of stuffed bell peppers without all the work. With kids running around, you need a recipe that can be whipped up in under 30 minutes. Most important, these peppers taste fantastic!


Instructions


1. Cut the tops off of the peppers. Remove the seeds from the inside of the peppers. Boil one large pot of water and place the gutted peppers inside the water. Then preheat the oven to 350 F.


2. While the peppers are boiling, brown the ground beef. When the meat is cooked, add enough salsa to make it moist.


3. Cook the rice according to the package directions. When rice is cooked, add it to the ground beef/salsa mixture. Now add a little more salsa to saturate the rice as well.


4. By now the peppers should be soft. You can tell by poking one with a knife -- it will slide in easily when they are soft enough. They will also turn a slightly darker olive green color. Remove the peppers from the water and place in a baking dish.


5. Fill the peppers with the ground beef mixture and sprinkle your choice of cheese on top. Cook in oven until cheese melts, about 10 minutes.
