Use Left Over Chicken


Wouldn’t you love to have some simple, delicious ideas for what to do with left-over chicken? Making fresh homemade meals every night may not be realistic with your busy schedule, but these ideas will allow you to cook one homemade meal and then use the left overs for the next night’s dinner.


Instructions


1. Dip left-over chicken into barbecue sauce. Reheat in your conventional or microwave oven and serve with baked potatoes. You can also shred the chicken and mix it with barbecue sauce. Warm it and serve as is or on a sandwich.


2. Slice left-over chicken breast meat. Dip the slices in egg wash (egg beaten with a little water), then in bread crumbs. Fry or bake them, and enjoy with fries.


3. Make chicken patty sandwiches. Slice a piece of chicken breast lengthwise down the middle. Dip each piece in egg wash and then bread crumbs. Fry a bit on both sides. Serve over lightly toasted bread layered with mayonnaise, lettuce and tomato. Add cheese if you like.


4. Remove any bones from left-over chicken. Chop the chicken meat and place it on top of a salad. It doesn’t matter what type of chicken you had for dinner—any kind tastes great over salad, and it is good to have that protein with your low-cal lunch.


5. Mix a bit of hot sauce in with your left-over chicken to spice up the mix. This will give you a different flavor for sure. Add a side dish of sliced avocados to cool the palate.
