Grill A Bay Scallop

Grilled bay scallops make a tasty addition to any meal.


Bay scallops, also referred to as Nantucket scallops, are one of the more expensive varieties. This sweet scallop is often used in soups, stews, appetizers, salads and stir fried dishes because of its size -- it is the smallest of all scallops. In fact, there can be up to 90 scallops in one pound. You can grill bay scallops over direct heat by placing them on a skewer, or indirectly by using aluminum foil.


Instructions


Direct Grilling Method


1. Soak the bamboo skewers overnight.


2. Preheat the grill to medium heat.


3. Toss the bay scallops lightly in olive oil and thread them onto the bamboo skewers. Place the skewers on the highest grill rack.


4. Grill for two minutes, turn and grill for two more minutes. You will know the scallops are done when they turn from translucent to opaque.


Indirect Grilling Method


5. Preheat the grill to medium heat.


6. Mold the aluminum foil into a tray with sides one inch high.


7. Place one pound of bay scallops on the tray. Sprinkle them with lime juice.


8. Put a large pat of butter on top of the scallops and season them with salt and pepper.


9. Place the scallops on the grill and cook for five to seven minutes or until they are opaque inside.
