Make Noodles

Make your own noodles from scratch.


Noodles, also called pasta, appear in many different cuisines from all over the world. While most purchase packages of dried pasta from their grocer, few things match the fresh flavor of homemade noodles. Add these as the base for your favorite sauce or put them into a chicken noodle soup for a better option than the red can of concentrated soup.


Instructions


1. Combine in a bowl 3 cups of flour with three whole eggs until the mixture forms a dough.


2. Turn the dough onto a lightly floured surface and knead it until it no longer feels sticky and slowly bounces back when you press your finger into it.


3. Turn the mixing bowl upside down over the dough to let it rest for 30 minutes.


4. Bring 1 gallon of water with 2 tablespoons salt to a boil in an 8 quart stock pot.


5. Cut the dough in half and set aside one half.


6. Roll one of the halves of dough on a floured surface into a thin sheet between 1/16 and 1/8 inches thick.


7. Cut ¼ inch wide and 6 inch long strips in the sheet of dough to form the noodles.


8. Drop these noodles into the pot of boiling water, and cook for five to six minutes or until when you bite into a noodle it has a slightly chewy, yet tender texture, known as al dente.


9. Drain the noodles through a colander and serve warm.


10. Repeat the rolling and cooking for the second half of the dough to prepare the other half of the noodles.
