Onion & Tomato Salad

Rinse all vegetables before making the salad.


An onion and tomato salad is a light, garden fresh appetizer served with a vinegar-based dressing. Making an onion and tomato salad requires approximately 10 minutes of prep time and a couple hours to let the flavors meld. Make the salad before you begin preparing dinner so it is ready by the time you are sitting down to eat. A basic onion and tomato salad yields six large servings.


Instructions


1. Combine 10 chopped Roma tomatoes, one sliced red onion and one thinly sliced cucumber in a salad bowl.


2. Pour 2 tbsp. olive oil, 3 tbsp. red wine vinegar, 1 tsp. black pepper and 1 tsp. salt into a small bowl. Whisk quickly to combine the salad dressing.


3. Drizzle the salad dressing over the tomatoes, onions and cucumber. Stir with a large wooden spoon to coat all of the ingredients with the salad dressing.


4. Cover the salad with a sheet of plastic wrap and refrigerate for two hours before serving.
