Make Chocolate Chip Banana Pancakes

Ordinary pancakes are made extra special with chocolate chips and bananas.


Though they were not called pancakes until the late 1800s, the history of pancakes traces back to ancient times when batter was cooked in a pan over direct heat. Pancakes are enjoyed all over the world and are as distinctive as the person making them. Ask 10 people and you will most likely hear 10 different recipes for pancakes. The basic pancake recipe usually includes flour, sugar, baking powder, salt, milk, butter and eggs. Other ingredients, such as chocolate chips and bananas, can be added for different tastes.


Instructions


1. Preheat an electric griddle to 375 degrees. Once it reaches the desired temperature, coat with butter or cooking oil spray.


2. Mix flour, cocoa powder, sugar, baking powder and salt in a large bowl with a wire whisk. Combine the ingredients until all the lumps are gone.


3. Melt the butter in the microwave. Allow it to cool for a short time so that the heat from the melted butter will not cook the eggs. Be careful not to let it sit too long, or it will return to a solid again.


4. Whisk milk, melted butter, eggs and vanilla until thoroughly combined.


5. Pour the egg mixture into the flour mixture. Stir ingredients with a whisk until just combined. The mixture will still contain a few lumps. This is normal and does not effect the texture of the pancakes.


6. Add mashed bananas and chocolate chips to the batter. Stir the mixture just until they are evenly distributed.


7. Pour the batter by 1/4 cupfuls onto a hot, buttered griddle. When the pancakes are bubbly on top, flip them and cook on the other side until cooked through.


8. Serve the chocolate chip banana pancakes with your choice of butter, syrup or a sprinkling of powdered sugar.
