Tips On Using Xanthan Gum

Xanthan gum is a corn-based fermented product that can be purchased in liquid or powder form. It acts as a thickener or adds volume for most food products. Xanthan gum is highly prized for use in gluten-free cooking and baking.

Xanthan gum can be found in such foods as ice cream, low-fat salad dressing, pastry filling and even cat food to help stabilize the product. Xanthan gum can be found at any health food store in powder form, as well as online stores. It is added to gluten-free wheat flour to help strengthen the dough to give a better feel in the mouth. Xanthan gum blends easily and does not affect the color or flavor of the final product.


Tips


When using Xanthan gum for baking with gluten-free flour, use equal amounts of Xanthan gum and flour. If too much Xanthan gum is used, the dough will be watery and not bake properly. When the final product has finally baked, the dough will be heavy and thick. Xanthan gum can also be used as a gelatin by using half the amount of Xanthan gum to gelatin, i.e. one teaspoon of Xanthan gum to two teaspoons of gelatin. Xanthan gum has the added benefit of being able to dissolve in hot or cold water.


Warnings


Xanthan gum is good for anyone who is allergic to gluten, but there is a downside; if the person is allergic to corn, it would be best to avoid Xanthan gum since it is a derivative of corn. An allergic person may experience irritated lungs or inflammation inside the nose or throat.
