Make Chicken Francaise

Chicken Francaise may sound like something you can only get in an expensive French restaurant, but it's actually fairly easy to make at home. You'll need to set aside a little time for this two-step preparation because you'll brown the chicken in a pan and then bake it in the oven. Here's make this yummy dish to warm your family's tummies.


Instructions


1. Combine egg and the juice of a half lemon in a shallow dish.


2. Mix together the flour and paprika in a separate shallow dish. Or you can use a half cup of breadcrumbs and a quarter cup of Parmesan cheese.


3. Take chicken breast halves and dip them first in the egg mixture followed by the flour or bread mixture.


4. Brown the breasts in oil over medium heat.


5. Set the cooked breasts aside and combine broth, a 1/2 cup butter and the juice of 1 1/2 lemons. Add garlic to taste, parsley and pepper. If desired, you can substitute white wine for half the broth. Simmer for 10 minutes.


6. Place the chicken breasts in a casserole dish, cover with the sauce and bake for 40 minutes at 350 degrees, uncovering the dish during the last 15 minutes.


7. Serve over rice.
