Brown Chicken Before Baking

Introduce flavor and golden brown color to your chicken by marinating it overnight in a browning seasoning blend. Give your baked chicken a head start on its way to roasted brown perfection with a secret weapon used by chefs all over the world. Take a few simple steps to ensure your next baked chicken will look as good as it tastes.


Instructions


1. Add your choice of browning liquid or liquids to a large plastic zip top bag. Soy sauce, Kitchen Bouquet browning & seasoning sauce, Maggi seasoning sauce, Worcestershire sauce, Braggs amino acids and liquid smoke all have a rich caramel color that will enhance the final look of your roasted chicken. Follow the specific directions of the browning liquid of your choice to use it in full strength or dilute it properly with water or chicken stock.


2. Sprinkle 1/2 tsp. each of coarsely ground black pepper and any of your favorite dried herbs and spices into the zip top bag. Most of the browning liquids have a salty taste and will not require adding additional salt to the marinade recipe to flavor the chicken.


3. Pour 3 tbsp. of olive oil into the plastic zip top bag and carefully seal it. Hold the bag over the kitchen sink before shaking it vigorously to mix all the ingredients. Open the bag and dip a clean spoon into the marinade to take a sample taste. Add more of some ingredients to balance flavors or reseal the bag if you like what you taste.


4. Place your marinade bag in the sink and prop it up with the seal open. Some larger zip top bags are pleated and spread to have a flat, stable bottom. Lower a whole chicken or chicken pieces into the bag, and then wash your hands before sealing the bag.


5. While still over the sink, roll the plastic bag gently in your hands to cover all parts of the chicken or chicken pieces. Set the bag in a large plastic tub and transfer it to your refrigerator. Allow the chicken to marinate in the refrigerator for at least six hours or overnight. Take the tub out a couple of times while marinating to turn the bag over so all parts of the chicken are evenly flavored and colored.


6. Remove the chicken from the bag and pat the surface completely dry with paper towels before placing it in a preheated 350-degree oven to bake. Chicken that is left moist and covered in marinade will take longer to brown and crisp in the oven.
