Spices For Fries

Try dressing up French fries with unusual or unexpected spices.


Whether you're trying to reduce your sodium intake or just expand your culinary horizons, French fries are a wonderful way to experiment with seasonings other than salt. Because the potatoes themselves are fairly bland, they allow the flavors of herbs and spices to shine. Try single spices or combinations of different seasonings on oven-baked or deep-fried French fries.


Garam Masala


Garam masala is an Indian spice blend. The exact recipe may vary, but it typically contains black pepper, cardamom, cumin, cloves and other sweet and hot spices. You may purchase it pre-mixed, or make your own. Try sprinkling it onto hot French fries just before serving them. It's particularly good on sweet potato fries.


Coriander


Coriander has a sweet, lemony flavor that's enhanced by toasting. It's an excellent addition to oven-baked fries. Mix 2 lbs. of sliced potatoes with 2 tbsp. of olive oil, 1 1/2 tsp. of cracked coriander seeds and a teaspoon of dried thyme, then bake at 450 degrees F for about 40 minutes. Turn the fries with a spatula once or twice.


Truffle Oil


For an unexpectedly upscale flavor, try tossing hot fries with truffle oil. This is olive or grapeseed oil infused with white or black truffles.The flavor is intense, so you won't need a lot--just a tablespoon for 3 lbs. of French fries.
