Cook Roast Potatoes


Roast potatoes are an excellent addition to a great meal. Follow the steps below and your family and guests will ask for these potatoes every time!


Instructions


Roasting Potatoes


1. Peel potatoes if desired, and cut each potato into 6 cubes. One cut lengthwise and two cuts width wise will do it. Have a large bowl of water and place potatoes in water after cutting. This helps stop discoloration from the air.Preheat oven to 400 degrees F.


2. In bowl combine 2 parts olive oil to 1 part vinegar. For example start out with 2 tbsp. of oil and 1 tbsp. of vinegar. Add minced garlic and potatoes. Toss well.


3. Spray shallow baking pan with non stick coating and then place potatoes in a single layer. Salt and pepper to taste and put in hot oven. Turn over after 10 minutes and bake an additional 10 minutes. Start checking for doneness by inserting toothpick or fork to see if it goes in easily. They may need an additional 5 to 10 minutes depending on how big the potatoes were to start with.


4. Remove from oven when tender and serve. Potatoes will be golden, tender, and delicious!
