Baste grilled meats with seasoned brown gravy.
Brown gravy is usually associated with oven-roasted meat, not grilling. In Texoma, Texas, a barbeque joint called PO Sam's makes a distinctive barbecue sauce with a brown gravy base that brings the gravy to the grill. The original recipe takes more than 24 hours to make and would be difficult to duplicate at home. However, the general idea of a brown gravy-based barbecue sauce is simple, especially if you start with a gravy mix.
Instructions
1. Prepare the brown gravy mix in a small saucepan as directed; usually, you will need to whisk 1 cup of water into the mix and heat the mixture for a couple of minutes over medium heat until thickened.
2. Add the garlic, ketchup, mustard, steak sauce and vinegar to the gravy in the saucepan. Simmer on low heat for 5 to 10 minutes. Add cayenne, salt and pepper to taste.
3. Put steak, chops, ribs or chicken on your grill and brush the meat with the brown gravy mixture.
4. Grill your steak, chops, ribs or chicken, turning occasionally. Brush on more sauce as necessary until the meat is cooked as desired.
