Carrot Avocado Salad

Carrots contain large amounts of Vitamin C and Vitamin K.


Avocados and carrots are some of the best foods you can eat to sustain good health. Avocados contain such nutrients as niacin, folate and biotin, while carrots offer significant servings of Vitamins A and C. Carrots are fat-free, while avocados contain monounsaturated fat which can help lower cholesterol and make you feel full after a meal, which can prevent unhealthy snacking. Combining these two ingredients can produce a tasty and nutritious salad.


Instructions


1. Cut off the stems of one bunch of kale with a chopping knife and chop the greens into small bite-sized pieces. Put the chopped kale in a large salad bowl.


2. Peel one avocado with a vegetable peeler.


3. Slice the avocado in half and remove the pit. Chop the avocado into small pieces and put it in the bowl, with the kale.


4. Mash the avocado into the kale with a wooden spoon. (If it's easier, use your hands to blend the ingredients together. The idea is for the avocado to create texture for the salad, not a dressing.)


5. Grate four medium-sized carrots into the bowl with the vegetable peeler.


6. Peel and chop one small red onion into small pieces, and them to the ingredients already in the bowl.


7. Add one-half tsp. of soy sauce.


8. Add two tbsp. each of toasted sesame seeds and lemon juice.


9. Toss the salad with a pair of salad tongs.


10. Let the food sit for 30 minutes, so the greens can soften before serving the salad.
