Killer Caesar Salad

Caesar salad was created in the 1920s in Mexico.


Caesar salad is a simple salad that, in its basic form, consists only of Romaine lettuce and Caesar dressing, sometimes with croutons added. Having a great dressing is the key to a great Caesar salad.


The History of Caesar Salad


Caesar salad was created by restaurateur Caesar Cardini in Tijuana, Mexico, in the 1920s. The salad, which is often tossed tableside, became popular with Hollywood stars and was written about in gossip columns. It eventually crossed the border to be served in American restaurants as well.


Killer Caesar Salad


The dressing is key to a great Caesar salad, and many chefs make their own. One recipe which has been passed along as "killer" combines egg, Parmesan cheese, olive oil, lemon juice, anchovy paste, garlic and sugar; some versions also include mayonnaise, vinegar or Worcestershire sauce. The ingredients are either whisked together or blended in a blender for smoothness, then poured over Romaine lettuce with croutons.


Variations


Modern Caesar salad variations include the addition of grilled chicken or shrimp. Some Caesar salads return to their Mexican roots by replacing croutons with tortilla strips.
