Use Hashbrown Potatoes

Sold in the frozen food section of the grocery store, hash browns are typically formed into a patty ready for cooking and serving for breakfast. These partially cooked potatoes cook quickly and provide a hot side dish with eggs, omelets or breakfast burritos. Although high in both carbs and fats, particularly if prepared by deep frying, hash browns are both filling and satisfying as an occasional treat.


Instructions


Deep Frying


1. Fill a cast iron pan or deep fryer with 2 to 3 inches of vegetable oil. Heat to the indicated temperature on the package.


2. Place the frozen hash brown in the oil and fry until golden brown and crispy.


3. Remove from oil and drain on a double layer of paper towels to remove excess oils.


4. Salt lightly and serve with scrambled eggs, egg white omelets or your favorite breakfast food.


Oven Method


5. Place frozen hash browns on a baking sheet and bake in the oven at 350 degrees Fahrenheit to reduce the amount of fat without sacrificing flavor.


6. Bake for approximately 10 minutes or until the patties are golden brown and crispy.


7. Sprinkle with salt to taste and serve with a healthy breakfast , such as low fat cottage cheese and fruit. The baked hash brown adds contrast to the meal and satisfies the palate without adding unnecessary fats.
