What Is Haggis Made Up of?


Haggis, the national dish of Scotland, sometimes horrifies people who hear about it and its ingredients for the first time. This dish is actually quite tasty, however, and is similar to the Cajun dish known as boudin or the Mexican dish, menudo. Haggis is extremely uncommon outside of Scotland, where it is a traditional dish for Robert Burns Day, celebrated on January 25.


Features


Sheep's organs (heart, lungs, liver) are the main ingredients in a traditional haggis. However, some recipes call for beef hearts and livers instead.


Other Ingredients


In addition to sheep's offal, haggis includes suet, ground oatmeal, onions, salt, pepper, nutmeg and meat stock.


Preparation


The ingredients of haggis are combined, stuffed into a sheep's stomach and boiled.


Serving


Traditionally, haggis is served with "neeps and tatties" (mashed turnips and mashed potatoes). Beef or lamb gravy sometimes accompanies haggis, as well.


Fun Fact


A Burns supper, held in celebration of Robert Burns Day, traditionally begins with a recitation of the poet's famous "Address to a Haggis."
