Store Homemade Cheese

Proper storage of cheese will help prevent mold.


Now that you have invested the time in making your own cheese, you'll want to store it properly to ensure that it lasts. Hard cheese will store longer than softer varieties, and cheese can be frozen for later use. A little time and effort will help you get the most out of your hard work.


Instructions


1. Rub your cheese with a small amount of olive oil--make sure to coat all areas of your cheese will the oil. The oil will help to prevent mold from growing on the cheese and keep it from drying out.


2. Place the cheese on a piece of cheesecloth or wax paper and wrap the cheese securely. Don't use plastic wrap for this because it will suffocate the cheese and could produce an unpleasant taste.


3. Place a paper towel to the bottom of an airtight container and place the cheese on top of it. Cover the container and place it in the refrigerator. Hard cheeses can be stored up to one month, while soft cheeses will store well for about two weeks with proper precautions. You can also freeze hard cheese for up to six months, however it will be more likely to crumble and is better if used for cooking after freezing.
