Whether served during the holidays or at the ballpark, glazed popcorn is a delightful treat for anyone at any age. The glaze used to make candied popcorn is relatively easy to make, though caution must always be taken when dealing with molten sugar. Here is a simple recipe for popcorn glaze.
Instructions
1. Preheat oven 250 degrees F.
2. Combine brown sugar, butter, corn syrup and salt in a heavy saucepan set over medium heat. Bring mixture to a boil while stirring constantly.
3. Hang candy thermometer on the side of the saucepan and ensure the mixture stays between 235 degrees and 250 degrees F. Adjust the heat as needed. Allow the mixture to boil undisturbed for 5 minutes.
4. Remove pan from heat and place on a heatproof mat on the counter or table. Stir in vanilla and then baking soda. The glaze is finished. Add the glaze to the popcorn right away.
5. Put the popcorn in a large bowl and drizzle the glaze over the popcorn. Stir to coat all of the popcorn. Transfer and spread the glazed popcorn onto a sheet pan.
6. Put the sheet pan on the center rack of the oven and bake for 1 hour, stirring the mixture occasionally to keep from sticking.
7. Remove pan from oven and allow popcorn to cool and for the glaze to harden completely. Break apart once cool.
