Improve A Slightly Burnt Flavor Of Lentil & Tomato Soup

Lentils are a healthy and delicious add-in to tomato soup.


Lentil and tomato soup has to cook for at least one-half hour to cook properly and meld all the flavors. Too often, cooks leave the soup on the stove unattended, burning the bottom of the soup. Most recipes for lentil soup with tomatoes call for browning the onions along with diced tomatoes before adding the lentils. It is also possible to burn the ingredients at this stage. However you burned the soup, be aware that it is possible to save the flavor.


Instructions


1. Take the pot of burnt soup off the stove top. Find a similar-sized pot and pour the top of the soup into it, being careful not to pour in the crust of burnt soup at the bottom of the original pot.


2. Wash the original pot, which will have retained most of the bunt flavor. Continue cooking your soup in the new pot on very low heat.


3. Taste the new pot of soup. If it still tastes burnt consider adding some strong spices that will mask the flavor, like a strong chili, oregano or fresh basil. A squirt of fresh lemon juice can help hide the flavor too.


4. Add strongly flavored toppings like Greek yogurt, sour cream or heavy cream. These dairies will make the soup creamy and help cover the burnt taste.
