Make Fancy Chocolates

Chocolate can be romantic, but it can also be the perfect way to treat yourself after a bad breakup. It also makes a great gift. Unfortunately, fancy chocolates can cost quite a bit of money. Chocolatiers make people think that the work is so complex that the price is more than reasonable. The truth is though, fancy chocolates are easy to make at home.


Instructions


1. Add food coloring to the melted white chocolate. You can use whatever color you like. For example, if you are using a heart shaped mold you may want to use red food coloring.


2. Brush the candy mold with the colored white chocolate. If you do this sparingly, you will be able to see the darker coating show through. This gives the candy a fancy brushed appearance.


3. Chill the mold. This makes sure that the first layer of your fancy chocolates is preserved when you add the second layer.


4. Add semi-sweet chocolate. Fill the mold with the second layer and then turn the mold over to remove the excess. This will create the coating for the sides and bottom of your fancy chocolates.


5. Chill the mold again. It's important to chill the mold after each step or your layers will run together.


6. Use piping bag to add jam. Fill a small piping bag with blackberry jam and then pipe each section of the mold full. Be sure to leave enough room for the last layer.


7. Chill yet again. If you don't follow this step, the last layer will go too far down into the jam.


8. Add more semi-sweet chocolate. Pour on another layer of semi-sweet chocolate and scrape to make sure the mold is completely filled.


9. Chill one last time. Once your fancy chocolates are chilled, they will easily pop out of the mold.
