Make Strawberry Salsa

Strawberries are a healthy -- and unusual -- ingredient in salsa.


Light and flavorful, this salsa pairs well with salty tortilla chips or crackers. The vinegar adds a slight sour note that allows the tart flavor of the strawberries to shine through. The cilantro and cucumber add earthy tones. This recipe serves 16 and takes roughly 20 minutes to prepare.


Instructions


1. Mix strawberries, kiwi, cucumber, cilantro and green onion in a medium size bowl. To make things extra easy, use the same bowl that you plan on serving the dip in.


2. Whisk red wine vinegar, salt, pepper and lime juice in a second, smaller bowl and set aside.


3. Pour the vinegar mixture over the strawberries and toss lightly. Be careful not to bruise or mash the strawberries while mixing.


4. Serve salsa immediately or allow it to marinade in the refrigerator for two hours to allow flavors to set. This dish pairs well with salty pretzel chips, tortilla chips or a crusty artisan bread.
