Make homemade chicken and macaroni salad.


The light flavors of chicken breast, mixed with macaroni pasta, vegetables and dressing combine into a delicious salad combination. Whether the occasion is a summer picnic, a backyard barbecue or an informal gathering, make homemade chicken and macaroni salad for a simple and delectable dish. Because this salad is versatile enough to make with whatever vegetables you have on hand, you can serve a tasty salad sure to please. This recipe serves eight.


Instructions


1. Place the chicken breasts into the shallow baking dish. Sprinkle the chicken with salt and pepper if desired, and cover the dish. Place the dish into the oven and bake the chicken breasts at 375 degrees Fahrenheit for approximately 25 to 30 minutes. Check the chicken breasts after the time elapses. If no pink remains inside the chicken breasts, they are finished and you can remove them from the oven.


2. Allow the chicken breasts to cool while you prepare the other salad ingredients.


3. Fill the stockpot to the top with water, and place it onto the stovetop. Set the burner to high, and boil the water. Add the macaroni to the boiling water, and cook it for seven to nine minutes or until it becomes tender. Remove the pasta from the stovetop, and drain out the water. Pour the macaroni into the large bowl.


4. Add the celery, carrots, green onions, strawberries and parsley to the bowl. Season with salt and pepper.


5. Add the mayonnaise to the bowl, and mix the ingredients well with the wooden spoon.


6. Transfer the cooled chicken breasts to the cutting board, and cut them into 1-inch chunks with the chef's knife. Add the chicken to the other salad ingredients, and stir everything well.


7. Cover the salad, and place it into the refrigerator. Chill the salad for two to four hours before serving.
