Make Fresh French Fried Potatoes

Make homemade fries that could easily rival your favorite restaurant's.


When it comes to homemade fries, it is a struggle to achieve the exact balance of a crispy well done exterior and fully cooked interior. It is easy to end up with fries that are soggy, burned on the outside or undercooked in the middle.


One way to ensure perfect home cooked French fries is to use the double frying method. Double frying entails cooking your fries twice; once to cook the inside and a second time to fry the outside. This method results in fries with a golden crispy exterior and soft interior.


Instructions


1. Skin the sides of the potatoes. Leave the skin intact at the ends. Cut the potatoes into quarter-inch-thick fries. Place the cut potatoes in a colander, and rinse them under cold water until the water runs clear.


2. Place the potatoes in a bowl, and add water until it floats one inch above the potatoes. Cover the potatoes with ice and allow them to soak for 30 minutes.


3. Add the oil to the heavy pot or deep fryer. Heat the oil to 325 degrees Fahrenheit. Drain the water off of the potatoes, and use a paper towel to pat the fries dry. Add two cups of potatoes to the oil.


4. Cook the potatoes for five to seven minutes until they are partially cooked and light brown. Remove the potatoes and place them on the draining rack. Continue this process until all the fries are partially cooked.


5. Heat the oil to 350 degrees Fahrenheit. Add two cups of the partially cooked potatoes to the oil. Cook the potatoes two minutes, until they are golden brown in color and fully cooked.


6. Remove the potatoes and place them on the rack to drain. Season the fries with the salt and pepper to taste. Continue this process until all of the fries are completely cooked and seasoned.
