Cook Lemon Chicken

Prepare your chicken a little different tonight. Adding a lemon flavor is a twist on the staple baked-chicken dish. But there are a wide range of ways to prepare lemon chicken. For instance, Chinese lemon chicken is made by battering and frying the chicken and then covering it with a lemon glaze. The below standard method is very close to the Italian style, but that recipe calls for the cook to add a few bread crumbs to the chicken while it cooks. First, try this recipe and, before long, you will be making your own spin on this dish.


Instructions


1. Mix lemon juice, rosemary, thyme, salt, and pepper in a bowl.


2. Make small cuts into the pieces of chicken so that the marinade will soak in. Place the marinade with the chicken in a tightly sealed plastic bag for 2 -- 8 hours and place these bags into a bowl to catch any leakage. Refrigerate.


3. Preheat the oven to 425 degrees when you feel it has marinated long enough.


4. Take the chicken out and place on a rectangular pan, deep enough to retain liquid run-off.


5. Place the pan in the oven.


6. Take a look into the oven at 15, 30, and 45 minutes. How long it will take depends on the size and thickness of the chicken. Chicken tenders will be finished in twenty minutes, chicken breasts in fifty minutes. Make sure the chicken is cooked through thoroughly. You can use a meat thermometer or cut through it to see if it is done.


7. Serve the dish while still warm.
