Bake Cookies At An Altitude

You will need to adjust some ingredients to bake cookies at high altitude.


High-altitude baking rules apply to any altitude higher than 3,500 feet. Recipes that are made in these locations need slight tweaking, depending on what you're baking. Because cookies have a lower water content and higher fat content, the adjustments made for them in high-altitude baking are very slight as compared with adjustments for cakes or breads.


Instructions


1. Preheat the oven 25 degrees hotter than the recipe calls for.


2. Begin to mix the dry ingredients of your cookie dough according to the instructions in the recipe you are using. When you add the chemical leavening (baking soda or powder,) use slightly less. For example, if the recipe you are using calls for 1 tsp. baking soda, use 7/8 teaspoon instead.


3. As you mix the dry ingredients with the wet ingredients, pay special attention to the texture of the dough. If it is even remotely dry or crumbly, add 1 tsp. of water at a time until the dough stays together.


4. Place the cookies in the oven. Check on them 10 minutes sooner than the recipe instructs.
