Make Plain Bruschetta

Bruschetta slices can be topped with tomatoes or anything else you desire.


Bruschetta are small slices of toasted bread with olive oil, garlic and grated cheese, and often additional toppings. Because of their size and the ease with which you can make them in batches, bruschetta make great appetizers for large parties. Make it easier for guests to get the appetizer they desire by creating a bruschetta bar. Prepare this basic bruschetta recipe and set out bowls of additional toppings that guests can add as they please. Potential toppings include diced tomatoes, olives, cooked and diced prosciutto and additional shredded or grated cheeses.


Instructions


1. Preheat broiler. Cut each slice of bread in half. Use pastry brush to coat both sides of each piece with olive oil. Sprinkle with salt and pepper to taste.


2. Place bread under broiler and watch for the top to brown. Turn the slices over to brown the other side. Repeat, in batches, until all slices are toasted.


3. Arrange the toasted slices in single layers on a serving plate. Rub the top of each slice with a garlic clove. Sprinkle the top of each slice with grated cheese.


4. Place the serving plate of bruschetta at the beginning end of a long counter or buffet table. Set a stack of small serving dishes near the bruschetta. Place the other topping ingredients down the counter or table so guests can add toppings as they walk along. Include a small serving spoon in toppings, where needed.
