Spaghetti and tomato sauce is a classic that's enjoyed by nearly everyone. Instead of opting for sauce in a jar from the supermarket, you can whip up your own in no time. Experiment with different kinds of tomatoes and vary the spices to create a signature sauce that's yours alone.

Assemble the Dish
1. Add water, salt and a splash of olive oil to a 12 qt. pot. Set the pot over high heat and bring it to a boil.
2. Place the pasta in the boiling water. Push the pasta down with a wooden spoon and stir it around to separate it. Set a timer for 8 to 9 minutes.
3. Set a colander in the sink (or use a multi-pot). Taste test a strand of pasta after approximately 7 minutes. Adjust the cooking time so that the pasta is al dente.
4. Pour the pasta into the colander. Rinse with cool water. Give the colander a good shake to get rid of excess water.
5. Place the pasta in a large bowl. Pour the hot spaghetti sauce over the top. Finish with grated Parmesan cheese. Serve with warm bread.

6. Use the side of large knife to crush the garlic. Remove the peel and ends and mince the cloves.
7. Set a medium-sized saucepan over medium heat. Add the olive oil and minced garlic. Saute until the garlic just starts to change color.
8. Add the can of tomatoes, the tomato paste and the red wine. Stir to combine well.
9. Add the spices. Adjust each one to personal taste. Add the salt and pepper. Reduce the heat to low. Cover the pot and simmer for 15 to 30 minutes. Stir occasionally.
