Cook Kelp Noodles (Or Eat Them Cold)

Kelp noodles come ready to eat and are great served as a crunchy snack, in cold noodle salads, in hot noodle dishes and soups. They have a mild flavor and go well with Eastern or Western flavors. Kelp noodles are extremely low in fat and calories and have a high mineral content.


Instructions


1. For a quick snack that is easier than ramen noodles and much healthier, serve kelp noodles right out of the package (some brands recommend that you rinse them off before eating them) with a vinaigrette or an Asian-style dressing made with soy sauce, toasted sesame oil and rice wine vinegar.

3. Use kelp noodles for any type of pasta salad. Or use them to make cold sesame noodles with shredded cabbage, carrots and red pepper and a peanut or sesame sauce. They also go well with miso mustard sauce. See the Resources section below for links to sauce recipes.


4. Kelp noodles are great for noodle soups. Just throw them in for the last few minutes of cooking.


5. With their mild flavor, kelp noodles go well with just about any hot pasta sauce. To serve them with tomato sauce, black bean sauce or another hot pasta sauce, you can boil them for about 10 minutes before eating them. This will take away most of their crunch and give them a texture similar to spaghetti. Or you can soften them by soaking them in sauce for 20-30 minutes. If you want them hot but still crunchy, just run them under hot water to heat them up.
