Make Samoan Keke Faasaina

Keke Faasaina, a crisp-on-the-outside yet tender-on-the-inside coconut dessert, pairs well with any summer meal. Flour, sugar, butter and eggs combine with coconut milk to create these fluffy and filling dessert cookies. You can serve Keke Faasaina with ice cream, chocolate sauce or even a bowl of fruit. Add cinnamon or powdered sugar as a garnish to liven up the taste of the coconut. Keke Faasaina also makes a tasty breakfast option. This recipe yields about 30 cookies.


Instructions


1. Preheat oven to 475 degrees F.


2. Melt butter and set aside in a large bowl.


3. Pour flour and sugar into the large bowl.


4. Add baking powder and eggs to the bowl and use a wooden spoon to combine the ingredients.


5. Pour coconut milk and vanilla to the bowl, stirring as you go. Then add coconut shavings.


6. Form dough into walnut-sized balls by rolling the mixture in your palms.


7. Place the balls on a greased baking sheet.


8. Bake the cookies for 12 minutes or until completely browned.


9. Garnish the cookies with cinnamon and powdered sugar to taste before serving.
