Red Wine
Red wines such as such as Merlot and Cabernet Sauvignon can be meaty and robust with a strong aroma. There are also more mellow, fruity varieties like Pinot Noir and Red Zinfandel. As a general rule, red wines pair well with hard cheeses with a milder flavor.
White Wine
Sauvignon Blanc is an example of a light, crisp and refreshing white wine. A heavier, more full-bodied white wine is Chardonnay. Whichever style you include with your cheese plate, white wines typically enhance the flavors of soft, more pungent cheeses with strong flavors.
Dessert Wine
The opposing tastes of salty and sweet are a classic combination, and wine and cheese are no exception. The sweeter flavors of dessert wines, including Port, Sauternes and Reisling, collide with the saltiness of the cheese and create a harmony that supports the theory that opposites attract.
Beer
Due to the vast number of beers that exist, ranging from the rich and deep stout to the brightness of a lager, the choices can be overwhelming. To keep it simple, match cheeses and beers that have similar qualities, but try not to create competition between the two.
